Do you cook/bake?
TR Recipe Book
Got the idea from a forum I frequent who have a very extensive recipe thread. Like over 100 pages.
So swap recipes to your hearts content!
I'll start with one of mine, you might be familiar with it.
Pumpkin Choc Chip Cookies!!!
Ingredients
-1 cup of cooked pumpkin (the original recipe called for canned pumpkin)
-1 cup white sugar
-1/2 cup vegetable oil
-1 egg
-2 cups of all-purpose flour
-2 teaspoons baking powder
-2 tsp. ground cinnamon
-1/2 tsp salt
-1 tsp baking soda
-1 tsp milk
-1 tablespoon vanilla essence (or paste)
-2 cups of chocolate chips or buttons (I've used white and/or dark choc when I've made them)
Method
1. Combine pumpkin, sugar, vegetable oil and egg in a bowl. In a separate bowl sift flour, baking powder, cinnamon and salt.
2. Dissolve baking soda in the milk, then stir in to the pumpkin mixture. Add flour mixture to pumpkin and mix well.
3. Add vanilla and chocolate.
4. Spoon onto a greased cookie sheet and bake at 180 degrees C (around 360 degrees F) for around 10-12 minutes or until the cookies are light brown and firm.
The recipe makes about 16 cookies.
If you're wondering about the taste, it's kinda like carrot cake. It's also a great way of getting vegetables into kids who don't like to eat them, like my younger siblings.

Re: TR Recipe Book
I'm thinking it should all be put into the first post, and make all fancy looking. Who agrees? And I'll put up the recipe for Chicken & Apricot Pizza C:
Re: TR Recipe Book
Maybe make the first post the list of recipes? I can update it as more are added.

Re: TR Recipe Book
@Darre- The other recipe thread I follow does have a lot of discussion in it as others try the recipes out and give their opinions of them as well as suggesting variations.
New recipe, one of my favourites, two ways of doing it...
Salmon with Roma Tomatoes and Red Onions
Ingredients:
- Salmon fillet, skin on, bones removed* (Salmon steaks can be used instead but it can be annoying to remove bones)
- Rock salt
- Tomatoes (Fresh, sliced/quartered or tinned, reserve some of the liquid if using the pan-fry method)
- Red onion, sliced (1 onion for every 1-2 serves, depending on size and whether you like red onions)
* I normally use tail pieces due to there being few (in many cases, no) bones as well as being more even in thickness.
Method
1. Wash the salmon briefly in cold water. Drain excess water and gently rub in rock salt to taste.
Bake method
2A. Preheat oven to 200 degrees Celcius
3A. Place salmon on tinfoil and layer the tomatoes and red onion on top. Wrap the tinfoil around like a parcel. Cook the salmon for 20-30 minutes, depending on thickness of fillet and preference. Drain excess juices before serving.
Pan-fry method
2B. Preheat pan. Melt a little butter or low fat margarine. Then add the salmon, skin down, and cover pan with a lid for 4-5 minutes. Cook on medium heat.
3B. Add tomatoes and red onions to pan and allow to simmer for another 4-5 minutes or until the salmon is cooked to your preference.
4. Serve with fresh salad or steamed vegetables, your preferred carb staple (rice, couscous, potato etc) and an optional squeeze of lemon juice.
Variations
-Marinade in balsamic vinegar (don't use salt!!)
-Steaming the salmon (I haven't tried this method yet)

Re: TR Recipe Book
One of two cookie recipes I tried out today, the other being Duskies. This one's a Kiwi classic. Original recipe is from the Edmonds Sure to Rise Cookbook.
Hokey Pokey Biscuits
Ingredients
-125g Butter
-1/2 cup Sugar
-1 tablespoon golden syrup
-1 tablespoon milk
-1 1/2 cups standard/plain flour
-1 teaspoon baking soda
Method
Combine butter, sugar, syrup and milk in a saucepan. Heat until butter is melted and mixture nearly boiling, stirring constantly.
Remove from heat and allow the mixture to cool to lukewarm.
Sift flour and baking soda together and add to the cooled mixture. Stir well.
Roll tablespoons of mixture into balls and place on ungreased baking trays. Flatten with a floured fork.
Bake at 180 degrees Celsius for 15-20 mins or until golden brown.
Variations
-Substitute part of the sugar for more golden syrup
-Substitute golden syrup for maple syrup (not yet tried this)
-Add chocolate chips
-Dip in chocolate
-Stop before adding the flour and baking soda and nom the wet mixture with ice cream (It's just that good as a sauce ;D)

Scrambled Ranch Eggs
~2 to 3 Eggs
~Dash of Ranch Dressing (Probably a teaspoon would suffice, depends on the person)
~Optional: Ground Pepper
~Cheese
~Milk
Pretty easy, make scrambled eggs as you'd normally would, add some Ranch Salad Dressing. It comes out really tasty.
